Strawberry Purée is a sweet and sour spread made from fresh or frozen strawberries. It’s modify strawberries into a smooth, velvety texture. The bright crimson colour and rich flavour makes strawberry an excellent addition to a variety of recipes.
Strawberry Purée can be used in topping for yoghurt, muesli or ice cream, as well as in smoothies, sauces or salads. This Purée has fantastically enhance natural sweetness and flavour to muffins, cakes and scones. It contains vitamins, antioxidants and fibre, which makes it a nutritious and healthy treat.
Strawberry Purée Recipe
Servings: 1 bowl (240 ml)
- 2 cups (250g) fresh or frozen strawberries
- 2 tablespoons (30g) granulated sugar (optional)
- 2 tablespoons (30g) water
Preparation
- Wash the strawberries, then remove stalks or leaves.
- Defrost frozen strawberries before using them.
- In a blender or food processor, put strawberries, sugar and water.
- Blend at high speed until smooth and pureed.
- Pass the purée through a sieve or cheesecloth to remove the extra pulp.
- Refrigerate the puree in an airtight jar for up to three days, or freeze for up to six months.

Note
- If you use sugar, you can change the quantity as per your taste. But it will affect the calorie count.
- Frozen strawberries have a higher water content than fresh strawberries, which affects the calorie count slightly.
- This Purée is fantastic for topping yoghurt, muesli or ice cream. You can use it in smoothies or sauces.
